Roll the mixture in your hands to make 15 bites.
Immerse each bite in coconut milk and roll in the shredded coconut until the bite is completely coated.
Refrigerate and enjoy.
Healthy Snack Recipe 2: Roasted Chickpeas
2 no salt-added canned chickpeas (19 oz/540 ml), rinsed, drained and patted dry
1 tbsp chili powder
1 tbsp smoked paprika powder
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp dry mustard
1 tsp salt
1/4 tsp ground black pepper
2 tbsp (30 ml) olive oil

Spread the chickpeas on a baking sheet and bake for 15 minutes.
In a small bowl, mix the spices.
Remove the chickpeas from the oven. Drizzle the olive oil over the chickpeas and stir until all the chickpeas are lightly coated with olive oil.
Add spice mixture to chickpeas, stirring until evenly coated.
Bake for about 20 minutes (stir after 10 minutes), until desired crispiness is achieved.
Let cool completely and store in an airtight container.
If the chickpeas soften after a few days, simply re-crisp them in the oven for 2-5 minutes at 325°F (170°C).
