Chicken Barley Soup

With the new year underway, it can be difficult to remain creative in order to sustain healthy eating habits. Here is a dietitian-approved chicken barley soup recipe that is healthy, delicious, and will help keep you warm during the cold winter months.



(Serves 6)


Ingredients:

  • 1 tbsp extra virgin olive oil

  • 1 large carrot, peeled and chopped

  • 1 small-medium yellow onion, chopped

  • 3 ribs of celery, chopped

  • 2 cloves garlic, finely chopped

  • 1 tbsp tomato paste

  • 5 cups low-sodium chicken broth

  • 1/4 cup parsley, chopped

  • 1 1/2 lbs boneless, skinless chicken breasts

  • 1 small can of crushed tomatoes

  • 2 bay leaves

  • 1/2 cup dry pearl barley

  • 1/2 tsp salt

  • fresh ground pepper, to taste

  • parmesan cheese (optional)


Instructions

  1. Heat a large pot on medium heat and add olive oil

  2. Add carrot, onion, and celery and stir. Saute for about 4-5 mins until softened. Add garlic and saute for 30 seconds

  3. Add the tomato paste and stir to combine

  4. Add the chicken broth, parsley, chicken breasts, crushed tomatoes, and bay leaves, and bring to a boil. Once boiling, cover and reduce heat to a simmer. Simmer over low heat for approx 25 mins, until chicken and vegetables are tender

  5. Pull out chicken breasts and place them in a large bowl. Shred chicken and return it to the pot

  6. Add barley, salt, and pepper to taste. Simmer for an additional 25 mins, until barley is cooked

  7. Discard bay leaves and serve with shredded parmesan cheese (optional). Enjoy!
